Les ingrédients
Pour 4 personnes :
300 g de pomme de terre (nous vous conseillons pour cette recette la Mona Lisa ou la Marabel)
600 g de truite saumonée, détaillée en fines lamelles
200 g de crème
Ciboulette
La recette
1. Épluchez les pommes de terre, puis rappez les avec une rappe grossière (à gros trous). Préchauffez votre four à 230°C (thermostat 8)
2. Salez et pressez les pommes de terre rappées avec les mains pour faire ressortir d'eau et l'amidon. Formez ensuite quatre galettes avec vos mains, ou à l'aide d'un emporte-pièce de 6 cm de diamètre.
3. Faites chauffer de l'huile dans une poêle, et déposer les galettes pour les faire dorer à feu vif sur les deux faces, en veillant à ce qu'ils soient bien croustillants.
4. Enfournez à 230°C pendant 5 min. Pendant ce temps là, préparez la crème en y incorporant de la ciboulette hâchée, puis en l'assaisonnant avec du sel et du poivre. Gardez 4 à 8 tiges de ciboulette pour la décoration.
5. A la sortie du four, entourez les croustillants des fines lamelles de truite saumonée. Vous pouvez aussi les disposer directement en rosace sur la galette. Déposez au dessus une quenelle de crème à la ciboulette. Pour les plus gourmands, vous pouvez ajouter une cuillère à soupe d’œufs de hareng. Enfin, décorer avec une tige de ciboulette.
6. Servez tout de suite. Bon appétit !
La variante
Pour ceux qui préfèrent la viande au poisson, on peut substituer la truite par un carpaccio de bœuf d'Aubrac (en réduisant la quantité à 500 g), et la crème à la ciboulette par un pesto ou une sauce au mascarpone (mixer un oignon haché, de la marjolaine, des capres, du sel & poivre pour les mélanger à la mascarpone). Miam !
