Les Pépites de l'Aubrac, c'est d'abord et avant tout une histoire de producteurs de l'Aubrac lozérien qui souhaitent unir leurs savoir-faire pour offrir des produits de qualité, sains et gourmands.
Ces producteurs ont décidés de répondre ensemble à l'attente des restaurateurs proposant à leur carte l'aligot, plat emblématique du territoire, de disposer d'un approvisionnement régulier et de qualité en pommes de terre, et à celle des particuliers de pouvoir trouver localement leur légume préféré. Ils se sont donc réunis au sein de l'Association de Producteurs de Pommes de Terre de l'Aubrac Lozérien.
Après une année d'essais techniques menés par 4 producteurs, en 2019, c'est au total 12 exploitations agricoles sur tout le territoire de l'Aubrac Lozérien, qui sont mobilisés pour la filière.
Souhaitant maitriser leur produit de la fourche à la fourchette, et ce dès le départ, ils décident donc de faire appel au soutien de partenaires locaux : la Chambre d'Agriculture de Lozère pour le lancement de la filière, Michel Mallet pour se former à la culture grâce à son expertise technique de la pomme de terre, Terra Cognita afin de se structurer commercialement ainsi que les Ateliers Sauvages pour le graphisme de leurs emballages et outils de communication.
Afin de proposer en vente directe et en circuits courts un produit en qualité et quantité régulière, les producteurs ont tout de suite adopté un cahier des charges ambitieux, reposant sur les forces de l'Aubrac (sols, climat) ainsi que sur les principes de l'agriculture raisonnée.
