Chez les Pépites, on la conseille de la préparer avec la Monalisa ou l'Agata.
Préparation : 15 min / Cuisson : 40 min
Les ingrédients
Pour 4 personnes
- 1 kg de belles pommes de terre, des Pépites pardi !
- 500 g de cantal jeune, de salers ou du fondant de Saveur Lozère, histoire de rester Lozérien tiens
- de l'ail, plein, de toute façon, vous aurez le ventre trop lourd pour faire des bisous
- Un peu de persil (pas trop de vert), du sel et du poivre
La préparation
- Épluchez les Pépites et coupez-les en rondelles (épaisseur de 3 à 5 mm). Rincez-les à l'eau tiède puis séchez-les vite fait dans un torchon.
- Émincez menu les gousses d'ail.
- Coupez le fromage en fines lamelles.
La cuisson des pommes de terre
Dans une grande poêle, versez un filet d'huile (tournesol ou similaire), puis faites revenir les pommes de terre d'abord à feu vif (5-10 min), puis moyen (25-30 min), avec un peu de sel mais pas trop quand même.
Assaisonnez
Quand les pommes de terre commencent à être bien cuites, ajoutez l'ail. Si si, celui que vous avez émincé.
Puis le poivre.
Emincez le persil, et parsemez le sur les pommes de terre.
Filez, filez !
Mettez les lamelles de fromage sur les patates et remuez le tout avec une spatule jusqu'à ce que ça fasse des fils. Ne vous inquiétez pas, c'est assez rapide !
C'est prêt ! Et ça donne trop envie !
Servez chaud !
Servez votre truffade et écoutez vos convives s'exclamer devant un plat aussi appétissant ! Il ne vous reste plus qu'à déguster.
N'oubliez pas la salade, avec une vinaigrette bien moutardée, histoire de donner du peps, et des échalotes, émincées elles aussi (on sait, c'est une obsession !).
Et si par pur hasard, il en reste, vous pouvez le réchauffer au micro-ondes pour le petit déj du lendemain.
